The experience
The class starts at the market in Ubud, where you walk through the stalls with your chef to see and smell the ingredients that anchor Balinese cooking. From there you move to a farm to understand where the spices come from and how they grow. This isn't a lecture: you're handling the ginger, the turmeric, the chilies and the coconut you'll use in a few hours, so when you start cooking you already know what you're working with.
Back in the kitchen, you prepare five dishes across the morning and early afternoon. Sayur Urab is blanched mixed vegetables with grated coconut and chili sambal; Sate Lilit wraps chopped chicken around lemongrass sticks; Suop Garang Asem is a chicken meatball soup with young banana plant and Balinese spices; Pepes Ikan steams fish wrapped in banana leaf; and for dessert, Dadar Gulung is a Balinese crepe filled with palm and grated coconut. The chef guides you through each one, but you're the one doing the chopping, the wrapping, the cooking. Everything you make is yours to take home.
Lunch is part of the class. You eat what you've cooked. Bottled water, coffee and tea are provided throughout. A driver picks you up from your hotel and brings you back when the class ends, so you don't arrange transport yourself.
Is this one for you?Children from age 7 can join, making this a class for families who want to cook together and take home a meal everyone helped make. The 6-hour format (market, farm, then kitchen) means you understand the ingredients before you cook with them, so even first-time cooks follow the logic of each dish.
