The Experience
The first thing I noticed was the warm clatter of pans and the smell of cardamom drifting from the kitchen — honestly, I was already hungry before we even started. Our host, Meena, waved us in with flour-dusted hands and a smile that made me forget my nerves about kneading dough in front of strangers. There’s something about being invited into someone’s home in Jodhpur for a private cooking class that feels both exciting and slightly awkward at first — but Meena just laughed when I tried to pronounce “baingan ka bharta.” I probably butchered it.
We started with saffron lassi (I still think about that creamy sweetness), then moved on to frying up paneer pakoda. The oil hissed as we dropped each battered cube in — I flinched once, Meena didn’t even blink. She showed us how to roll out chapati so thin you could almost see light through it, her wrists flicking so fast I had to laugh at my own lumpy attempts. Her husband joined us for chai halfway through; he told stories about growing up in Rajasthan and why everyone here has their own secret blend of garam masala. We cooked palak paneer and dal fry together, tasting as we went — sometimes too much salt, sometimes not enough, but always fixable.
I liked how nothing felt rushed or staged. Kids peeked around corners and someone’s phone rang with a Bollywood ringtone in the next room. By the time we sat down to eat (on the floor cushions, plates piled high), it felt less like a lesson and more like dinner with friends. The coconut laddu for dessert was sticky and sweet — I may have eaten two without meaning to. Walking out into the evening air after that meal, full and happy, I realized this was probably my favorite part of our whole trip to Jodhpur. It’s hard to explain why — maybe just feeling welcome somewhere new.
