The experience
You arrive at Christina's kitchen in her Athens neighborhood and begin with traditional Greek coffee. The lesson runs about two hours: Christina walks you through making phyllo dough by hand, rolling it thin enough to see through, then layering it with wild spinach, local greens, and Greek cheese to build spanakopita. She shows you how to fold and shape the pie, then it goes into the oven while you move to her dining table. The class is private (just you and Christina), and she teaches in English or Greek, whichever you prefer.
After the spanakopita bakes, you eat it warm alongside the seasonal dishes Christina has prepared: lentil salad with marinated anchovies, baked feta with tomato and peppers, stuffed vine leaves, orzo with sausage, and Greek yogurt with homemade bergamot spoon sweet. Tsipouro (a traditional Greek spirit) and a glass of white or rosé wine come with the meal. The whole experience (cooking and eating) takes about three and a half hours.
If you book the market tour add-on, you spend an hour before cooking visiting Christina's favorite cheesemonger, deli, and bakery in her neighborhood, learning which ingredients she uses and why. The neighborhood is hilly, so wear comfortable walking shoes if you choose that option. You'll receive printed recipes to take home, so the phyllo technique stays with you after you leave Athens.
