The Experience

You walk into the courtyard and the smell hits you first — not what you'd expect from a distillery. The Probona Distillery has been making Kitron, the famous citron leaf liqueur, since 1915, and Sofia, the fourth generation of the family, is the one showing you around. She moves through the space like she knows every corner, which she does — her family's been here the whole time.

The tour lasts an hour, and it's split between the actual distillery floor and the tasting courtyard. You'll see how they work with the citron leaves, the equipment that's been refined over more than a century, and then you move to the garden area where the real part starts. Sofia sets out glasses and begins pouring. There's the Kitron itself — smooth, herbaceous, nothing like the syrupy liqueurs you might have tried elsewhere.
