The Experience

I still remember how the air inside Maison Noilly Prat felt—cool and just a little sharp, with that faint herbal smell I couldn’t quite name at first. We’d barely stepped through the old wooden doors in Marseillan when the cellar master greeted us. He had this way of speaking, half serious, half joking, and he handed me a headset for the audio guide (my French is... not great). There was a small group with us, mostly locals actually, which made me feel like I’d stumbled into something people here really cared about.

Walking through those cellars was nothing like I expected. The barrels were huge—some looked older than my grandparents—and our guide kept tapping them gently as he talked about the vermouth aging process. At one point he let us run our hands along the wood; it was rough and cold and smelled faintly of wine soaked deep inside. Someone asked if they ever get lost down there (I think she meant it as a joke), but he just grinned and said you learn to follow your nose after a while.

The tasting at the end surprised me most. I’d tried vermouth before but never like this—each glass had its own story, its own weird little aftertaste that lingered on my tongue longer than I thought possible. The dry one was sharper than I expected, almost salty? And then there was this sweeter version that reminded me of orange peels and something floral. Our guide told us how Marseillan’s sea air changes everything about the flavor—I didn’t really get it until I tasted it myself. Honestly, I still think about that last sip sometimes when I catch a whiff of herbs at home.
