The experience
You start in the green coffee section, where you'll handle raw beans and run your own quality control using ATAGO refractometers, hygrometers and colorimeters: the same tools professional cuppers use. You'll grade the beans for defects and granulometry, learning what separates specialty coffee from commodity crop. Then you move to the roasting area to watch a GIESEN machine transform those same beans, with software tracking every temperature shift and timing variable that shapes the final flavor.
The lab section is where the sensory work begins. You'll use a flavor wheel, Le Nuz de Café and other tasting equipment to train your palate, then move to the extraction bar. There you'll see three different brewing profiles (different origins, processes or grind sizes) pulled on a SYNESSO espresso machine with ACAIA scales, BARATZA and TIMEMORE grinders, and FELOW jugs. You taste all three, and by then you know enough to describe what you're tasting: the acidity, the body, the notes that come from the bean itself versus the roast versus the brew method.
At the end you choose three coffees from the selection to take home or taste on the spot, armed with the vocabulary and the understanding to actually evaluate them. The whole class takes two hours, leaving the rest of your day open.
