The experience
The class happens in a bamboo home in the hills above Armenia, reached by a short drive from the city. You'll work with ingredients that come from the surrounding territory: the same ones that appear on tables across the coffee region today. As you cook, you taste several snacks made from what you're preparing, and the experience ends with a typical regional lunch that brings together what you've learned about the place through its food.
The instruction weaves in stories that shaped this land: accounts from pre-Columbian times, the period of conquest, and the arrival of coffee farming. These are narratives that came down through books and through families: the memory of the territory itself. You're not just learning recipes. You're tracing how the people who lived here, and live here now, have always expressed their identity through what they cook and eat.
