The first thing that hit me was the smell — not just sweet, but deep and a little earthy, like someone just opened a box of cocoa right under my nose. We slipped on aprons (mine was way too big, which made me laugh), and our instructor, Marc, started tossing little facts about Belgian chocolate as he handed out bowls of glossy melted chocolate. He had this calm way of explaining things — didn’t mind when I asked twice about tempering. The place felt busy but somehow peaceful, with people chatting in French and English around us.
I never thought making chocolate truffles would be this messy or fun. My hands were sticky pretty much the whole time, but nobody cared — even the kids at the next table were giggling as they tried to roll their truffles without squishing them flat.
