Bean-to-Bar Chocolate Workshop Brussels: Make Truffles
Roll up your sleeves and make real chocolate, not the melted kind.
You'll taste fresh cacao pulp and raw beans straight from the pod, then spend 90 minutes making mendiants, truffles, and a personalized chocolate bar in a real bean-to-bar factory — the only one in Brussels that isn't using industrial chocolate. Everything you make gets packaged to take home, and you'll know that part of your ticket price is funding fair wages for the farmers who grew the cacao.

The Experience
The apron they hand you at the door is embroidered with their logo, which sounds small until you realize it means you're not walking into a tourist demo space — you're walking into an actual chocolate factory in Brussels where the people working there actually make chocolate for a living. Our guide, one of the certified artisan chocolatiers, starts by pulling out a fresh cacao pod. It's heavier than you'd expect, and when she cracks it open, the beans inside are coated in this white, fruity pulp that tastes nothing like chocolate. That's the moment it clicks: chocolate doesn't start as chocolate. It starts here.
The 90-minute workshop moves fast but doesn't feel rushed. You taste single-origin cacao from different countries — each one tastes wildly different, which nobody tells you beforehand — and then you move to the making part. You're crafting mendiants (those flat chocolate discs with nuts on top), hand-rolling truffles, and building your own personalized chocolate bar from scratch. The machinery is right there in the room, and the guide explains what's happening at each step because this is their actual workspace, not a stage set. The chocolate you're working with comes from their own bean-to-bar process, which means it's traceable and sourced through a supply chain with no deforestation and fair income for farmers — 33% of what you pay for the workshop goes straight to the cacao farmers, which is the kind of detail that sticks with you while you're tempering chocolate.
By the end, you've packed your creations into a gift box to take home, and you get 20% off anything in their boutique on the way out. The whole thing happens in English in their Chocolate Academy in the heart of Brussels, and it's wheelchair accessible if that matters for your group. The workshop fills up, so booking ahead is the move.
