The Experience

The workshop starts with you at a table, a chocolatier across from you, and a blank tablet in front of you. For the next hour in Brussels, you're learning the actual technique — how to temper, how to use an icing bag, how to layer toppings so they stick. The chocolatier walks you through it, and you're free to improvise. Some people go minimal. Others load up with nuts, sprinkles, freeze-dried fruit. You make three things: a tablet, a lollipop, and mendiants (those flat chocolate discs with toppings scattered on top). Kids over 8 can do this too, though anyone under 12 needs an adult at the table.

When you're done, you wrap up what you made and head into the museum part. This is self-guided, so you move at your own pace through the history of cocoa and chocolate — how it got to Europe, how it was made centuries ago, how it became what you just made. Audioguides are available in 11 languages, which matters if you want context instead of just looking at old equipment.
