The experience
The bonbons are not typical chocolates. Nadia Haskell, an internationally renowned Master Chocolatier, designs each one as a bespoke creation for Passel Estate: available only here as part of the guided tasting. You'll sit in the estate's tasting room and work through the pairings at a relaxed pace, moving through combinations like lemongrass and white chocolate alongside one wine, then blackberry, rhubarb, beetroot, fig leaf and espresso with another. The aim is to show how the right chocolate can open up the wine's flavours rather than compete with them.
The tasting is built for all levels of wine knowledge. Whether you're new to wine or you've tasted your way through Margaret River before, the guide walks you through what's happening in each pairing: how the spice in one bonbon echoes a note in the wine, or how the texture changes what you taste next. The experience is designed to be informative and engaging without the pretension. A $5 contribution from each booking goes directly to conservation efforts at the estate.
