The experience
You're picked up from your hotel by motorbike: Chef Dat and student drivers weave through Nha Trang's traffic to reach the neighborhoods where locals actually eat. The scooter is the fastest way through the city's narrow streets, and it takes you straight past the tourist zones to low roadside tables under awnings where the real cooking happens. Your first stop is banh can, soft rice flour mini pancakes cooked in small terracotta pans, topped with quail egg or minced pork, squid or shrimp. You dunk them in nuoc mam pha, the pungent fermented fish sauce mixed with fried spring onion, and the flavors stack on top of each other.
From there you move through banh xeo: a crisp turmeric-golden pancake filled with bean sprouts, scallions and local squid, wrapped in greens and dipped in the same sauce. Then fresh rice paper rolls: you pick different herbs and pickled carrot, white radish and BBQ minced pork wrapped around bamboo stick, roll it yourself in soft rice paper and dip it into a sauce made from sticky rice, minced pork and fish sauce. Chef Dat talks through how each dish comes together and why the ingredients matter. The noodle soup course is Bun Ca, a well-combined broth of onion, tomato and tuna with sliced herbs that hits four flavors at once: sweet, sour, salty and spicy.
The tour ends with Che Chuoi Nuong, a banana wrapped in sticky rice and banana leaf, grilled over charcoal until crispy, then served in a plate topped with sweet coconut milk and ground peanut. By the time you finish, you've eaten your way through a corner of the city and tasted the produce and techniques that define Nha Trang's street food. The whole experience takes four hours from pickup to return.
