Learn to Make Mole in Chicago: Authentic Mexican Class
Mole is built from dozens of ingredients (chiles, nuts, seeds, chocolate) layered into a sauce that takes real skill to balance.
Learn to make traditional Mexican mole with Carla, a chef trained in Spain at a Michelin-starred kitchen, in a two-hour hands-on class in Chicago. You'll prepare the sauce from scratch using authentic ingredients and technique, then sit down to eat what you've made: mole served with chicken, beans and green rice, plus a fresh hibiscus infusion. The class welcomes all skill levels and you leave with the recipes to cook it at home.
The experience
Mole is a traditional Mexican sauce built from a long list of spices and ingredients: chiles, nuts, seeds, and chocolate all working together to create a flavor that's complex and hard to pin down. Carla walks you through the real method, the one she learned working in professional kitchens in Spain and now brings to Chicago. This isn't a demonstration you watch. You're making it yourself, learning how the ingredients build on each other and where the balance lives. The class runs two hours and is built for all levels. You don't need cooking experience to follow along.
After you finish cooking, you sit down to eat. The mole you made comes to the table with chicken, beans and green rice, and a fresh hibiscus infusion with cinnamon and ginger. Carla is from Mexico and has lived across Spain and Chicago, drawn to each place for its art and diversity. She brings that background into the kitchen. You leave with the recipes written down, so the technique stays with you after the class ends.
