The experience
Two hours covers three Northern Italian dishes, each one built on a technique you'll use again. You start with a Caesar salad (romaine, garlic and lemon dressing, pan-fried croutons, Parmesan), then move to the main: potato gnocchi shaped by hand and cooked in a creamy tomato vodka sauce, served in a bread bowl. Dessert is a flourless chocolate cake made with eggs and sugar. The class moves through each course in order, so you're learning as you cook, not watching a demonstration.
Your hands do the work. You knead the gnocchi dough, infuse the dressing, pan-fry the croutons, and bake the cake. The chef guides the technique and timing, but the shaping, the seasoning, the decisions are yours. All the fresh ingredients and cooking equipment are there. You bring nothing but your appetite and the willingness to get your hands in the dough.
When the cooking is done, you sit down together and eat the three courses you made. Guests often bring wine or beer to enjoy throughout the class. You leave with the recipes for every dish, so the techniques stay with you after you're back home.
