The experience

Four hours starts at Talad Chat Chai, the 100-year-old fresh food market in Hua Hin's town center. You walk through the stalls with your instructors, learning which ingredients go into Thai cooking and how locals shop for them daily. This is not a quick stop. You are there to understand what you are buying and why it matters to the dishes you will make. After the market, you move to a traditional Thai teak house where the actual cooking happens.

You prepare and cook five dishes: green curry paste from scratch, gaeng keaw wan gai (green curry with chicken), pad Thai, tom yum goong (the four-flavor soup with shrimp), and khanom lod chong (a Thai dessert in coconut milk). Your instructors guide you through each one, and you handle the knife work, the paste-making, the timing. Lunch is the food you cooked, eaten in the teak house. You leave with a recipe booklet and a certificate so you can make these at home.

Pickup and drop-off within Hua Hin town are included, along with bottled water, snacks, coffee and tea. Alcoholic and soft drinks are available to purchase. The whole class runs four hours from start to finish.

Do I cook the dishes myself or watch a demonstration?
