The Experience

The day started with me almost missing the van because I thought “7-ish” meant 7:15, not 6:55 (don’t do that). Our guide, P’Nok, just grinned and handed me a tiny cup of coffee before we set off from Chiang Mai. There was this faint smell of roasted beans already in the air—maybe psychological? The drive out was quiet at first, but as soon as we switched to the 4WD and hit those bumpy tracks into the Karen hills, everyone woke up. I remember catching glimpses of mist clinging to the trees and thinking, “We’re really out here.”

Walking into the coffee forest felt different than I’d pictured—cooler, softer underfoot. The villagers showed us how Arabica grows under these tall canopies; you could hear birds but also someone chopping wood somewhere nearby. We each planted a seedling. Mine was crooked (P’Nok laughed and fixed it). It’s strange how planting something makes you feel like you belong there for a second. Lunch was all veggies from their farm—simple stuff but honestly tasted better after that walk. I still think about that pumpkin soup.

After lunch we tried roasting our own Chiang Mai Arabica beans over a little fire. It’s harder than it looks—my batch got a bit smoky but smelled amazing anyway. The hands-on part made me appreciate every cup more; Li from the village explained how they judge the right moment by sound and smell, not timers or gadgets. Then came the V60 pour-over lesson—everyone got quiet for once just watching water spiral down through those grounds. My cup tasted earthy and sweet at the same time, which probably sounds made up but it wasn’t.

By late afternoon we were back in Chiang Mai city, tired in that good way where your shoes are dirty and your head feels clear. I kept sniffing my little bag of roasted beans on the ride home—still can’t believe I made those myself. There’s something about seeing where your coffee starts that sticks with you longer than you expect.
