By 10:30 AM you're in a Thai-style wooden home with aprons, chopping boards and chef's knives laid out. The cooking class runs three hours and covers five dishes: Green Papaya Salad (Som Tam), Stir-Fried Rice Noodles (Pad Thai), Spicy Prawn Soup with lemongrass and galangal (Tom Yum Goong), Thai Basil Chicken (Pad Kra Pao Gai) and Stir-Fried Morning Glory (Pad Pak Bung Fai Daeng). You learn the role of Thai herbs and spices as you work through each one. After lunch, the route turns toward Khao Yai National Park.
