The Experience

The day starts with a 6:30 AM pickup from your Bangkok hotel. The drive takes you to a local morning market in Nakhon Nayok—the kind overflowing with color and fresh produce that most visitors never find on their own. Your English-speaking guide teaches you how to choose the best ingredients for the day's menu: which herbs are at their peak, which fish or meat is fresh, which vegetables will hold their flavor. You'll walk past vendors selling meat, seafood, vegetables and local preserved foods, and you can pick up seasonal fruit or Thai desserts to bring along. This is not a tourist stop; it is where locals shop, and the merchants are used to answering questions.

By 10:30 AM you're in a Thai-style wooden home with aprons, chopping boards and chef's knives laid out. The cooking class runs three hours and covers five dishes: Green Papaya Salad (Som Tam), Stir-Fried Rice Noodles (Pad Thai), Spicy Prawn Soup with lemongrass and galangal (Tom Yum Goong), Thai Basil Chicken (Pad Kra Pao Gai) and Stir-Fried Morning Glory (Pad Pak Bung Fai Daeng). You learn the role of Thai herbs and spices as you work through each one. At the end you sit down and eat what you made, with bottled water and fresh fruit or Thai desserts included; soft drinks and alcohol are available for an extra charge.

After lunch, the route turns toward Khao Yai National Park. You enter from the Prachinburi side and walk 1 km to Haew Narok Waterfall, the park's signature sight, following a safe trail down the cliff to see it from below. A stop at the Visitor Center gives you facts about the park's history and its museum. The final stop is Km. 30 Viewpoint on Thanarat Road, where you can stand and look out over the northern section of the park. Before heading back to Bangkok, you stop at a small restaurant surrounded by a lush garden for complimentary ice cream—flavors include white wine lychee, red wine strawberry, anchan (a Thai herb), rum and raisin—served in a cup you can take home as a souvenir. The return drive reaches your hotel around 6:30 PM.
