The Experience
Sierra de Ronda's Almazara El Toro is not a typical mill tour. The building itself—designed by Philippe Starck and shaped like a bull—fuses the industrial process of olive oil making with contemporary architecture and art. You walk through the space to understand how olives become oil, then sit down for a directed tasting of the organic EVOO the mill produces, guided by someone who knows both the product and the building's story. A video of the production process plays during the tasting, so you see the machinery and the timing that connect what you're drinking to what grows outside.
The route takes you between the olive groves and vineyard that surround the mill, so you're standing in the landscape the oil comes from. The building's structure—austere, rigorous, inspired by Andalusian character—sits in that same terrain, and the contrast between the avant-garde architecture and the centuries-old crop is part of what makes the place work. The museum and tasting areas are built into the design, not added on, and everything is wheelchair accessible, including the route through the grounds.
The whole experience runs 90 minutes. You'll need to arrange your own transport to the mill, which sits about five minutes' drive from Ronda itself. A Campero menu is available for an additional charge if you want to extend the visit with food. Parking is free on the premises, and there's a photo exhibition in the lot.
