The experience
The class starts with a glass of wine and local cheese in a quinta overlooking the sea, then moves into the chef's kitchen for the hands-on work. You'll prepare a starter, main dish and dessert. The menu typically includes the best mussels of Galicia, clams with codium seaweed, steamed mussels, seafood soup rice and Santiago cake. The chef shares the history and stories behind each ingredient and technique, walking you through the old family recipes she learned growing up.
You choose the seasonal seafood and other ingredients yourself, then cook under the chef's guidance. A glass of Albariño wine accompanies the cooking, and when everything is ready, you sit down to eat the three courses you've just made. The class wraps up with lunch and plenty of wine, so the whole experience (from shopping the ingredients to tasting the finished dishes) stays inside the three hours.
