The experience
The class starts with the Welcome Ritual: a hands-on mixology masterclass that breaks down the chemistry of a real Caipirinha and premium tropical infusions. Then comes the Master's Cut, where you learn butchery fundamentals: how to read grain direction, identify the best cuts, and understand why the blade matters. The core of the evening is Conquering the Flame, a live-fire masterclass where Marcelo reveals how charcoal management, searing zones and heat control separate a good cook from a master. Every temperature is read by feel and instinct, not by a thermostat.
The Masterclass Banquet flows continuously across the rest of the four hours. You taste rare cuts carved and explained live at the grill: the Picanha (the star of Brazilian BBQ), Fraldinha (Brazilian flank steak), Costelinha de Porco (pork ribs caramelized over charcoal), and the crown jewel. A beef short rib rack smoked low and slow for five full hours until it falls off the bone. The menu also includes Linguiça sausage grilled over live coals, Coxinhas (Brazilian chicken croquettes), artisan garlic bread straight from the charcoal, and grilled bananas with vanilla ice cream. Traditional sides (Farofa and Vinagrete) complete every plate. An elite open bar runs throughout with unlimited Brazilian beer, curated Portuguese wines and crisp local beers.
The guide speaks English, Spanish or Portuguese. Children are welcome from age 12. Public transportation options are available nearby, so you can reach the venue without arranging a private transfer.

What do I actually learn to do in this masterclass?
You learn three core skills: mixology (how to build a real Caipirinha and tropical infusions), butchery (grain direction, cut selection, blade technique), and live-fire cooking (charcoal management, searing zones, heat control by feel). The pit master demonstrates each one hands-on, then you apply what you've learned as you taste through the menu.
What is the Picanha and why is it the star of Brazilian BBQ?
Picanha is a premium cut of beef that sits at the top of the sirloin. It's carved and explained live at the grill during the tasting, and it's the centerpiece of Brazilian barbecue tradition: tender, flavorful and cooked at exactly the right distance from the embers.
What does the five-hour smoked beef short rib taste like?
The beef short rib rack (Ripa de Costela Defumada) is smoked low and slow for five full hours until the meat falls off the bone. It's the crown jewel of the menu: deeply smoky, tender and rich from the long cook.
