You make the Pisco Sour from scratch, using fresh fruits bought that morning at the local market.

This hands-on cooking class in Cusco teaches you to prepare Lomo Saltado, Papa a la Huancaína and Pisco Sour in a traditional 1930s house under the guidance of a professional Peruvian chef. The class runs about three hours in the afternoon, includes all equipment and ingredients, and ends with the traditional dessert Picarones. Vegetarian and allergy-friendly adaptations are available; you receive recipes to take home.

The Experience

The class happens in a traditional house built in 1930, tucked in the heart of Cusco. A professional Peruvian chef leads you through the full preparation of three dishes that define Peruvian cooking: Lomo Saltado, the stir-fried beef that carries soy, vinegar and spice; Papa a la Huancaína, the potato dish dressed in a vibrant cheese and ají amarillo sauce; and the Pisco Sour, the national cocktail made with fresh fruits sourced from a nearby market. You handle every step yourself—there is no watching from the side. All equipment and ingredients are provided, and the chef walks you through the techniques and seasonings that make each dish work.

The afternoon session runs roughly three hours, and by the end you've also eaten Picarones, the traditional fried pastry dessert with natural honey. The class wraps with something practical: you get written recipes so you can recreate the meal at home with family and friends. If you eat vegetarian or have allergies—gluten-free, lactose-free, peanut, seafood—the chef adapts the menu before you arrive. A licensed guide fluent in English and Spanish is with you throughout, and children from age seven are welcome to join.

You can book the cooking class alone, or add a market tour beforehand to see where the fresh ingredients come from. Public transportation stops are nearby if you need them. Bring an appetite and plan to spend the afternoon learning how Peruvian home cooking actually works.
