A two-and-a-half-hour chocolate workshop in Cusco where you learn to make Belgian-style pralines and mendiants using organic Chuncho cacao from the Sacred Valley, then take home a personalized box of your own creations. The class covers the history of chocolate, hands-on praline and mendiant making, ganache preparation, and a hot chocolate you'll learn to make yourself. Children from age 12 are welcome, and guides speak English, Spanish and French.
The Experience
You've got a free afternoon in Cusco and want to do something that doesn't feel like another museum. This workshop sits in the heart of the city and starts by walking you through chocolate's place in Peruvian culture before you touch anything. Then you move into the making itself: the workshop gives you the setup and the guidance, and you spend the next couple of hours building pralines and mendiants from scratch. The organic Chuncho cacao comes from the Sacred Valley, and the workshop sources it directly—that's the cacao you're working with, not a generic substitute.
The fillings are where it gets specific to Cusco. You choose from homemade local jams, a range of local and organic nuts, and other toppings the workshop has on hand. You'll make around 21 pralines and 10 mendiants, which means you're not rushing through a demo—you're actually building a collection. Partway through, you learn to make ganache, and you prepare a hot chocolate from scratch that you get to taste. By the end, everything you've made goes into a personalized box that you take home.
The class runs two and a half hours, which is long enough to learn the technique without feeling like a half-day commitment. Guides speak English, Spanish and French, and children from 12 onward can join. Bottled water is included, and the workshop is near public transportation if you're getting there on your own.
