You arrive at Chef Khadija's traditional villa to a welcome of Moroccan tea and sweets. Before the cooking begins, you pick your dish from the menu—tajine of chicken or meat, pastilla, couscous, rfissa or Moroccan salads—and Chef Khadija adjusts it for vegetarian or vegan preferences if needed. The class itself is where the learning happens: you stand alongside her in the kitchen and participate in every step, from preparing ingredients to the final plating. She walks you through the techniques and the reasoning behind each one, so you understand not just what to do but why.

Chef Khadija has over 35 years of cooking experience and runs the class as a teaching kitchen, not a performance. You're free to take pictures and videos, and you leave with a handwritten note paper listing all the steps you need to recreate the dish at home.
