What do you actually make in a chocolate workshop? In this one, you work with dark chocolate tempering—the technique that gives chocolate its snap and shine—and learn to prepare a flavored ganache with cream. From there you shape and fill bonbons and truffles by hand, using traditional methods and high-quality ingredients. The workshop is in ChocoMuseo, located in the heart of Puerto Vallarta's city center, and an expert chocolatier guides you through each step in a relaxed, friendly setup.

The 2-hour session covers everything from cacao origins to the craft itself. You get an apron, hat and chocolate mold for the duration, and the museum provides all the dark chocolate, ganache and toppings you need. By the end, you've made enough to fill a box—your handmade chocolates and truffles go home with you, not into a display case.

The workshop area sits on the second or third floor and has no elevator, so plan accordingly. Public transportation options are available nearby if you're not driving. Service animals are allowed. If you want to tip your guide after the class, 15 to 20 percent is customary.
