The experience
The morning starts at the Mayor Market in downtown Guadalajara, a few blocks from the Metropolitan Cathedral. Noemi takes you through the stalls to select the ingredients for the menu you've chosen in advance, whether that's meat in its juice, pozole, tamales, stuffed chilies, birria or mole. Along the way she shares how to spot the best quality produce and meat, and gives you a walking tour of the historic neighborhood. You'll have a traditional light breakfast before heading to the patio kitchen.
Back at the house, you prepare the dishes from scratch. You'll grind corn kernels for tamales the traditional way, make fresh tortillas, prepare sauces in a molcajete, and learn the techniques and terminology behind each dish. A tequila-based drink, main course with complements, dessert and sauces are all part of what you make. Noemi walks you through each step so you can replicate the recipes at home. If you have dietary restrictions or special requests, contact her before booking to adjust the menu.
The class runs six hours total. Noemi guides in English or Spanish. On Wednesdays, if you book four tickets, you receive a bottle of tequila as a gift. The patio is wheelchair accessible, and the kitchen setup works for families with children from age 10 and up.
