Find truffles with dogs, then cook and eat them the same day

A 3.5-hour class in Ascoli Piceno where you hunt truffles with two trained dogs in a private forest, collect fresh eggs, make handmade tagliatelle from scratch, and eat lunch with the truffles you found, plus local appetizers, wine and dessert. The hunt lasts about an hour. The pasta-making and meal take the rest of the time. A guide fluent in English or Italian leads the whole experience.

The experience

The day starts with coffee and a briefing on what to expect, then you head into the forest with Electra and Ghianda, two truffle-hunting sisters whose noses are 40 times more sensitive than yours. As you walk, the guide points out wild orchids, local flowers and wildlife: deer and black squirrels sometimes appear if the group stays quiet. The dogs do the real work, sniffing constantly and digging when they catch a scent. When they find a truffle, you'll smell its fresh aroma and pull it from the ground yourself. The hunt normally runs about an hour and you participate fully.

After the forest, you collect fresh eggs from the chicken house and move to the kitchen for a pasta-making masterclass. You'll make handmade tagliatelle together, then sit down to lunch with the truffles you found, a local appetizer, truffle toast, Ascolana olives stuffed with meat, porcini bruschetta, local cheese and salami, and a homemade ricotta pie with seasonal fruit. A bottle of local organic sparkling wine and coffee round out the meal. The guide brings twenty years of experience supplying Michelin-starred chefs and has appeared on BBC television. The whole package is built around the truffles and the day you spend finding them.
