You turn off the main road and drive into the Fragni wood, where the Masseria Fragnite sits surrounded by pasture and old stone walls. The farm is still working — cows in the milking parlor, pigs in the yard, calves running free between the trees. Your guide walks you through first, explaining what a Masseria actually is (a fortified farmstead, centuries old, built around the idea of self-sufficiency), and then you move into the dairy itself. The Mastro Casaro — the master cheesemaker — is already at work, stretching hot curds by hand. You watch mozzarella take shape in real time, the way it's been done here for generations.
