The experience
Riva del Garda sits in the hills above Lake Garda, and this class happens in the hosts' home kitchen. You'll learn the fundamentals (how to mix durum wheat semolina with water and work the dough), then move through the shapes: spaghetti and tagliatelle by hand, gnocchi rolled and dimpled, lasagne sheets layered, orecchiette formed with your thumb, pizzocheri folded, maccheroni al ferro wound around a rod. The hosts walk you through each one, and you make several formats during the lesson.
Once the pasta is ready, you shift to sauces. You'll cook a few of them (tomato, meat, fish, Genoese pesto, walnut or almond) learning which one suits which shape and why. The pairing matters: a delicate sauce clings differently to a thin strand than to a thick tube or a folded pocket. After the lesson, you sit down to eat what you've made, each pasta matched to its sauce. The meal also includes extra dishes prepared from the garden's organic seasonal vegetables and herbs, so you taste how the ingredients work across the full lunch.
The class welcomes all skill levels and runs in English or Italian. Public transportation reaches the location, and the full address arrives on your confirmation voucher. If you have food allergies or follow a special diet, let the hosts know when you book.
