You'll work in the home kitchen of a Cesarina (a member of Italy's oldest network of home cooks), who teaches you her family recipes as if you were part of the household. The class opens with prosecco and nibbles, then moves straight to the pasta. You learn to roll sfoglia (the fresh pasta sheet) by hand, then shape two different pasta types, likely cavatelli or orecchiette, the shapes Puglia is known for. Each one gets dressed with a simple sauce and cooked so you taste what you've made. The tiramisu comes last: you layer the coffee-soaked ladyfingers and mascarpone cream yourself, building the dessert from scratch.
The group stays small, maximum 12 people, so there's room to ask questions and watch closely as the Cesarina works. Water, wine and coffee come throughout. Everything you prepare is included in the tasting. The class takes three hours total. Public transportation runs nearby if you need it to reach the home.
