The experience
What do you actually make in a cooking class? Here, you start with a mixed aperitivo of cold cuts, cheeses and typical Italian appetizers while Lydia walks you through the fresh pasta process: mixing the dough, shaping it by hand, and finishing it with tomato sauce and basil. After tasting that first dish, you move to tiramisu, layering it together and then waiting an hour while you talk through the secrets and techniques she's learned. Wine, water and soft drinks come throughout.
The class runs three hours in Lydia's home kitchen in Milan. She's Sicilian by birth and has built a reputation sharing authentic recipes and ingredient knowledge. She's been asked for her opinion on culinary topics by radio and newspapers. The class is small enough that you're working side by side, not watching a demonstration. If you're under 18, you'll have soft drinks instead of wine. Everyone else chooses red, white or another drink to pair with the meal.
