The experience
You arrive at a cozy dining space on the border between Tuscany and Umbria and spend the first part of the afternoon learning to make three types of pasta by hand. The chef walks you through tagliatelle with meat sauce, pici, a traditional long pasta, with garlic sauce, and dumplings finished with butter, sage and Parmesan. You work with your hands, not just watch a demonstration. The instruction happens in English, Portuguese or Italian depending on the group.
Once you've shaped and cooked the pasta, you move to the table. Each dish arrives with a glass of wine, and you taste what you made in the garden if the weather holds, or inside by the fireplace if it doesn't. The whole experience runs about three hours from start to finish. Water, coffee and tea come with the meal.
Children from age six can join and learn alongside adults. Infants are welcome if they sit on a lap, and the space has room for strollers if you need one. If you have a service animal, it can come too.
