The experience
You arrive and start with capunti, the handmade pasta of Altamura made from remilled durum wheat semolina. The instructor shows you how to shape each piece by hand (the slow gesture that defines the dish), and you work through the technique until you have enough to cook. Then you move to the sweet rosé, the traditional almond-flour dessert that rounds out the meal. Both recipes belong to Altamura's food memory, and making them yourself is how you understand what goes into them.
Once everything is ready, you sit down and taste both dishes. A glass of wine from the Apulian territory comes with the meal. Children from age 4 are welcome to join. Those under 18 receive a non-alcoholic alternative to the wine. The whole experience runs two hours, built around the conviviality of eating together after you've made the food yourself.
