The experience
The tour starts in the vineyard with a short walk where you'll learn how the vines are cultivated in this part of Veneto. You then move into the winery itself to see the stages that turn grapes into wine: the pressing, the fermentation in autoclaves or bottles, and the bottling. This is where the Prosecco Superiore is actually made, and seeing the equipment and the process gives shape to what you'll taste afterward.
The tasting sits down at a table with five wines in front of you. They span the range of what the region makes: sparkling wines produced using the Charmat method in autoclaves, lightly sparkling wines made through bottle refermentation, and still wines from the same land. Tasting them side by side shows you how the method changes the wine, and how the local tradition compares to newer styles. Each wine is paired with something to eat: cold cuts and cheeses of the territory, then a selection of artisanal biscuits that finish with the Spumante Incrocio Manzoni 13.0.25. Bottled water is included throughout.
