The Experience

You arrive at Putu's home in an ancestral village outside central Ubud, surrounded by gardens and tropical orchards. She welcomes you into her kitchen—simple, with just a two-burner cooktop—and you begin chopping, grinding and grilling alongside her. The dishes shift depending on the day and what's fresh from her farm: gado gado with hand-pounded peanut sauce, perkedel (crispy corn fritters), rendang simmered in coconut milk, sayur urab with fresh-grated coconut, and black rice pudding with palm sugar. As you work, Putu shares the stories behind each recipe, the spices she uses and their traditional healing roles in Balinese life, most of them grown on her own land.
