Mustard oil and mustard seed paste are the backbone of every dish you'll make.

A private Bengali cooking class in Kolkata at Zinnia's apartment in New Town, where you spend an hour learning to prepare 3–4 traditional dishes from scratch, then eat what you cooked at her family's dining table. The class covers the spices and techniques unique to Eastern Indian cuisine, with vegetarian options available. You choose lunch or dinner, and the meal includes local beer.

The experience

Zinnia taught herself to cook after marriage through recipe books and long phone calls with her mother, and she still treats her kitchen as a stress buster. She welcomes you to her apartment with a welcome drink and walks you through her approach to Bengali food before you step into her small kitchen. The one-hour class starts with an introduction to Indian spices: specifically panch phoran, the five-seed blend of cumin, brown mustard, fenugreek, nigella and fennel that defines Eastern Indian cooking. She explains why mustard oil matters in Bengali cuisine and shows you how mustard seeds are ground into paste, then guides you through rolling dough and frying luchis (deep-fried flatbread), preparing shorshe chingri (prawns in mustard gravy), and making tomato and dates chutney from scratch.

After the class, you sit at Zinnia's dining table (sometimes with her husband and 14-year-old daughter if they're home), and eat the meal you helped prepare. The spread might include shorshe maach (fish in mustard sauce), kosha maangsho (mutton curry), aaloo posto (potatoes with poppy seeds), begun bhaaja (eggplant fry), and cholar dal (lentils), served with rice or flatbread and the chutney you made. Dessert is paayesh, a rice pudding that Bengalis make for any occasion. The menu shifts with the season, and vegetarian versions are available if you request them at booking.

All taxes and fees are included, along with 1–2 glasses of local beer. You pick whether you want lunch or dinner, and Zinnia can accommodate any allergies or dietary restrictions you mention when you book.
