The experience
You start at the Antigua street market with your guide, walking through stalls to see and smell the ingredients that anchor Guatemalan cooking: corn, peppers, beans and the Spanish and Mayan flavors layered into them. After 1.5 hours there, you move to the kitchen for a safety briefing and then begin cooking under an expert chef's watch. You'll prepare one main dish (hilachas or tamales are options), two side dishes and one dessert like camote en dulce or rellenitos. The chef guides you through each step, and when everything is done, you sit down and eat what you made.
In the afternoon, you head to ChocoMuseo Antigua for a 2-hour chocolate workshop. You start with cacao beans fresh from the harvest and roast, peel and grind them into paste. From there, you learn to prepare the traditional chocolate drink the Mayas invented, then move to making your own chocolate bar to take home. The whole process, from bean to finished product, happens in front of you and under your hands.
The day runs about eight hours total and includes your guide, lunch, and printed copies of every recipe you made so you can cook them again at home. Pickup from Guatemala City is included. The guide speaks English or Spanish depending on your preference.
