The experience
You start with pickup from your Guatemala City hotel, then travel to Antigua for a four-hour class built around making a real meal. A professional chef walks you through the Spanish and Mayan influences that shape Guatemalan food, starting with the staple ingredients (corn, peppers, beans) that anchor the cuisine. You'll work through tostadas with guacamole and black beans, pepian served over rice, and mole, with the chef offering guidance as you cook.
Once you finish, you eat what you've made. The meal and dessert are part of the class, so you taste the food you prepared rather than watching a demonstration. After lunch, you head back to your hotel with a printed list of recipes, so the dishes you learned stay accessible when you're home.
The class is small enough that the chef can give real feedback, and the kitchen safety overview at the start means you're set up to work safely. Both English and Spanish are spoken, so language isn't a barrier to following along.
