The experience

The session centers on two honey varieties that Naxos produces (summer honey and winter honey) each one shaped by different flowers and herbs that bloom at different times of year. You taste them side by side to understand how the flavor, aroma and texture shift between seasons. At the same time, you're sampling a selection of Naxian and Greek extra virgin olive oils, learning which ones pair with which honey and how the oils work in everyday cooking at home. A cheese plate, fruit plate and yogurt with honey round out the tasting, so you're eating as you go.

The workshop covers how olive oil production has evolved from the late 1700s to today and why extra virgin oil remains central to Greek culture and daily life. You'll learn the proper way to taste olive oil (what to look for in color, aroma and flavor), and discover how infused oils can transform simple recipes. The guide walks through the culinary uses locals rely on, so you leave with concrete ideas for your own kitchen.

The tasting runs 45 minutes in the heart of Naxos Town.
