Cook the way Greek grandmothers did, in a wood-fired oven on a working olive farm.

A six-hour cooking class in Corfu combines a morning at the open fruit and fish market in the historical centre with hands-on instruction in traditional Greek recipes at a family villa, ending in an olive grove walk, oil tasting, and a meal cooked in a wood-fired oven. The class includes transfer from the market to the villa if needed, a guide in English or Greek, and all ingredients purchased during shopping. Children from age 12 are welcome.

The experience

The day starts where locals shop: Corfu's open fruit and fish market in the historical centre, where you pick out fresh organic vegetables, feta cheese and herbs harvested hours earlier. After browsing the Jewish quarter and the monuments nearby, you drive to the family villa 20km away (transfer can be arranged if you don't have a car). A bruschetta on handmade bread and a glass of Corfiot gingerbeer welcome you before the cooking begins.

The instruction centers on the wood-fired oven, the ancient method that has shaped Greek cooking for centuries. You learn to prepare traditional recipes from scratch: a homemade cheese pie with phyllo, feta and herbs; Greek salad with fresh tomatoes, cucumber, peppers and olives; tzatziki; and marinated pork slow-cooked in the oven with local beer, mustard and honey. Just before lunch, you walk through the ruins of the family's 200-year-old olive press in the grove, learn about harvesting and the trees themselves, and taste the olive oil that comes from them.

The meal arrives at a table in a tranquil setting, treated as part of the family rather than as a guest. Wine, beer, water and soft drinks flow throughout. Dessert is a Corfiot baklava with kumquat syrup and walnuts. An experienced guide in English or Greek moves through the day with you, and the entire experience (shopping, cooking, tasting, eating) takes six hours.
