The Experience
I stepped off the bus in North Corfu and there was this earthy smell—olives, grass, something a bit smoky in the air. Our guide, Spiros, waved us over with a grin that looked like he’d been doing this his whole life (which, turns out, he sort of has). We were just twelve people, shuffling along a dirt path between these gnarled olive trees—some so old you could fit inside their trunks if you tried. Spiros pointed out wildflowers I’d never seen before and told us how his great-grandfather planted half the grove. I tried to imagine generations working here; it’s hard not to feel small in that kind of history.
The walk wasn’t long but I kept stopping to touch the bark—rough and cool even in the sun. There were birds somewhere overhead and once or twice I caught a whiff of thyme or maybe sage. When we reached their olive mill (built in the 1800s but still smelling faintly of pressed fruit), Spiros’ mother was waiting with tiny glasses of water and this shy smile. Inside was quieter than I expected—just our footsteps echoing while Spiros explained how they used to press olives by hand. He let us try spinning the old wheel (harder than it looks) and laughed when I nearly toppled over.
Tasting time came next: slices of bread dipped in their own organic olive oil—green-gold and peppery on my tongue. Someone asked about “the secret” to good oil and Spiros just shrugged: “Patience.” The meze spread after was simple but so good—salty cheese, local meats, tomatoes that actually tasted like tomatoes. His father poured homemade wine that went down easier than expected (maybe too easy). We sat under the trees eating and talking; at one point someone started singing softly in Greek. I still think about that part—the quiet happiness of it all.
