The experience

The Governor's mill sits on land the Dafnis family has worked for generations, and your visit starts with a walk through their ancient olive groves. A resident olive expert meets you there to explain the oldest olive variety in the world and what it takes to grow it on this island. You'll see the untouched landscape itself before moving to the mill, where the real learning begins.

Inside the mill, you move through the "taste like a pro" program: a workshop where an olive expert teaches you how to recognize high-quality oil the way professionals do. You learn to distinguish between top-quality and non-extra-virgin oils, understand the therapeutic and health-protecting qualities of olive oil, and practice the tasting technique itself. The mill combines traditional methods with modern technology, and you'll watch both at work. Paired with bread, tomatoes, feta cheese, handmade crackers and a glass of local wine, the tasting becomes a lesson you can repeat at home with friends and family.

The tour wraps by early afternoon, and you leave with a certificate of participation. Pickup and drop-off are arranged based on your location and group size, so the logistics are settled before you arrive.
