The Experience

I’ll never forget the first bite of that warm cheese pie in Corfu Town — we’d barely met our guide, Sofia, and already I was balancing flaky pastry in one hand and ginger beer fizzing in the other. The place was called “the saint,” tucked right into the historical center. There was this mix of sweet custard and sharp feta in the air, and people just drifting by on their way to work. I tried to say “kalimera” to an old man at the next table and he grinned but answered in English anyway. I guess my accent gave me away.

After brunch, we wandered towards a tiny shop where kumquat liqueur lined the shelves like little orange jewels. I didn’t expect to like it — too sweet, maybe? But it’s weirdly addictive; syrupy but not cloying. Sofia handed us mandolato (sort of nougat) and Greek delights dusted with sugar, telling us about how kumquats became a Corfiot thing thanks to some British guy ages ago. She laughed when I tried to repeat the story back — probably got half of it wrong.

The dairy shop was my favorite stop. It’s been there since 1950, apparently the last of its kind in town. The owner had hands like he’d been working butter for decades. He let us taste fresh butter on bread so soft it almost collapsed under the knife, plus this pudding that tasted like childhood somehow — milky and just a bit tangy. There was galaktoboureko too (I still can’t pronounce it), all sticky syrup and crisp layers.

We finished off at a small restaurant for lunch, pastitsada steaming on the table next to sofrito and a glass of ouzo that hit harder than I expected. Someone started playing music outside; you could hear forks clinking and people talking over each other in Greek. I kept thinking how every stop felt personal — not just food but stories, tips from Sofia about olive oil (“never heat it too high!”), even her favorite bakery down an alley we almost missed. Honestly, I left full but also kind of wishing I could do it again tomorrow.
