The Experience

Your driver picks you up at your hotel around 3:30 or 4 p.m. and takes you by air-conditioned minibus through the countryside toward the White Mountains. The ride itself is part of the introduction to the landscape and the region you're about to cook from. When you arrive at the family house, you move straight into the kitchen with a local cook who teaches you how to make dishes the way Cretan families have for generations — ntakos (the barley rusks topped with tomato and cheese) and tzatziki among them, along with other home-made appetizers and main courses.

The cooking happens in a real working kitchen, not a demonstration setup, so you're handling ingredients and techniques rather than watching. Once the food is ready, you take a tour of the family garden and house, which gives you a sense of where these recipes come from and how they fit into daily life here. Then you settle in to taste what you've cooked, paired with local wine and cheese platters made from Cretan varieties. The cottage sits high enough that you can see both the sea and the mountains while you eat.
