The day starts with a walk through old Tbilisi, where your guide points out the main sights and tells the history and legends of the Georgian people. Then you head to a family home (the hosts are hereditary winemakers and culinary specialists), where the real work begins. While they prepare, you can walk the grounds and photograph the views. The master class covers khinkali (meat dumplings) and khachapuri (cheese bread baked with egg), both dishes you'll learn to shape and cook yourself using techniques simple enough to repeat at home.
After cooking comes the supra, a Georgian feast that is as much ritual as meal. The table fills with Georgian salad, pickles, shashlik (grilled meat skewers), aubergine, imeretian cheese, churchkhela (grape and walnut candy), and the khinkali and khachapuri you just made. Homemade wine and chacha flow throughout. Your hosts teach you the rules of the feast: the sequence of toasts, how to drink from a horn, and the meaning behind each one. You'll learn to exclaim the famous Georgian toasts at ease, not as performance but as part of the meal itself.
The evening closes with dance and song. Professional dancers teach you the basic movements of Georgian folk dance to live music, and you'll hear Georgian polyphony, the vocal style recognized by UNESCO as part of the world's cultural heritage. Private transportation is included for pickup and return.
