The Experience
You meet your instructor at the cookery school on Rue du Cardinal Lemoine in central Paris. If you've booked the 6-hour class, you start with a croissant and coffee or tea, then head to an open-air market in the Latin Quarter to pick out the ingredients for your meal and taste cheese with your instructor. The 4.5-hour class skips the market and begins directly at the school, where your instructor has already sourced the ingredients.
Once in the kitchen, you plan your menu—an appetizer, main and dessert—then cook under your instructor's eye. You'll learn traditional French techniques as you work: the salmon tartare with yuzu and soy-poached turnip, the Parisian-style coq au vin, the poached peach with raspberry coulis and homemade vanilla ice cream. After about two hours of cooking and a glass or two of wine, you move to the dining table with the other cooks and sit down to the meal you've prepared. You'll taste half a bottle of white or red wine and learn how to pair it with what's on your plate. Before you leave, you receive electronic copies of all the recipes so you can recreate the dishes at home.
The class is limited to 11 people, so you get personal attention from the instructor. Public transportation is available near the school. Children as young as 12 can attend, though they must be accompanied by an adult; anyone drinking wine must be at least 18.
