The experience
The pairing starts with the wines and foods apart, so you taste the caviar on its own, the foie gras by itself, the Bordeaux on its own, then you bring them together and something shifts. A sommelier walks you through five pairings over 90 minutes, explaining the history of each product and why a particular wine matches a particular delicacy. The wines include older vintages and classified growths from Bordeaux. The foods are made by local producers and chosen specifically for how they answer to the wine. You might find that a wine you thought you knew tastes completely different when it sits next to the right cheese or chocolate.
The workshop is built around curiosity and even a little courage. The combinations are not obvious, and part of the point is learning to trust your own palate instead of following a rule. A sommelier leads the tasting in English, Spanish or French, and the room stays small enough that you can ask questions and hear other people's reactions. Caviar, sturgeon and caviar rillette toasts, artisanal semi-cooked foie gras, cured duck breast, farmhouse cheese and Bordeaux-made dark chocolate all come with the tasting. You bring nothing but an open mind.
