The Experience

Lunch after all that dust felt like a reward—falafel wrapped in warm bread and kushary piled high with lentils and crispy onions. Ahmed showed us how to eat it properly (“No fork! Like this!”), then told us about his grandmother’s recipe while we sat in the shade watching tour buses come and go. I still think about that meal sometimes when I smell cumin at home.
