The experience
Stari Grad, once the island's capital under its ancient name Pharos, anchors the middle of the day. You'll walk its narrow stone streets along the waterfront, stop for coffee, and visit Tvrdalj, the fortress-home of the 16th-century poet Petar Hektorović, which still holds his original fish pond. The route passes through the UNESCO-protected vineyard and olive groves that define the island's interior before reaching Vrbovska, a small town known for its stone bridges spanning a winding canal and the St. Mary of Mercy fortress-church rising above it.
Wine tasting happens at one of the island's established wineries (Tomić, Carić, Duboković or Ventus), where you taste local varieties. The meal that follows is served in either an abandoned ethno-eco village or an olive grove konoba, depending on availability. You'll choose between Peka (lamb or mixed lamb and veal cooked under an iron bell with ash, or octopus on request), Gregada (Dalmatian fish stew with potatoes), or Pašticada (stewed beef with gnocchi), followed by a traditional almond dessert. Local wine, water and grappa accompany the meal.
The tour opens at the French Fortress on St. Nicholas hill, built by Napoleon's troops and offering views across Hvar town, the Spanish Fortress, and the Pakleni and Vis islands. If you visit in June or July, the route passes through Brusje's lavender fields, where you can walk among them. Your driver-guide speaks English and handles all logistics. Pickup is from your Hvar hotel, the bus station or the ferry port in Stari Grad, with return to the same point.
