The Experience

The drive inland from Hvar takes you through Brusje and Velo Grablje, past lavender fields and toward Hora—a protected settlement that has survived nearly 2,400 years largely unchanged. By the time you reach Jelsa, the pace has already shifted you out of vacation mode and into something slower.

Duboković winery sits in the winemaker's family house, and the tasting happens in a candlelit cellar. The wines are Hvar reds—including Medvid, a cult Croatian wine—paired with the winery's own macerated olive oils (basil and sage flavored), homemade bread, and cheese. The tasting is intimate; there's no crowd, no rush through a list. The winemaker's story and the wines are the point, and the olive oils often become the thing people remember most and take home.
