The Experience

The first thing you hear when the guide pulls up to the food stands is the hiss of hot oil hitting dough. You're 30 minutes south of Medellín's center, in a neighborhood where tourists don't usually go, and the smell of fried buñuelos and roasted meat fills the narrow street. This is where locals eat, not where guidebooks send people. The Medellín food tour starts here, at a stand so traditional they make the buñuelos huge — cheese-filled, crunchy on the outside, and nothing like the versions you'd find in a supermarket or a tourist zone.

You move through the stops in a rhythm that feels unhurried. First comes the Chocolo Arepa, sweeter and softer than the white arepas most visitors try, then the buñuelo, then into a fonda paisas — one of those old taverns where Aguardiente has been drunk for centuries. The guide pours a shot of Medellín's own Aguardiente Antioqueño, the anise-seed liquor that's won awards, and you wash it down with an empanada filled with potato and ground meat, served with four different sauces so you can taste how locals actually eat it.
